1lb organic grass fed ground beef 85% lean
1 organic egg
1/2 med organic onion
7.5 oz organic cannellii beans
1 gel tub knorrs beef broth
1/4 cup organic ketchup
Lightly chop onion in food chopper, add beans and beef gel broth to the onions and blend til smooth.. put right in pan or a bowl, add the egg, the hamburger and mix by hand or with a large spoon.. mold the loaf to your liking.. If using the ketchup, then make a slight reservoir in top of loaf and fill with the ketchup..
Cook in a preheated oven at 350°f for 40 minutes.. Turn oven up to 450°f for 5 more minutes..
The texture is moist and meaty, if I didn’t put the beans in myself, I’d never have guessed they were in it.. I could slightly taste the onion, as part of the meatloaf.. The blended flavors really surprised me and I hate to be the one patting myself on the back but it was awesome ! Very flavorful and very easy to make.. Maybe next time I’ll use half the onion amount and replace that with green peppers..Guess the beans, onion, gel tub of broth and half can of beans total to a little over 1 lb because it weighs 2 lbs cooked.. This makes 4 generous protein packed meat portions with beef, egg and bean protein.. I should’ve used the juices and fat for gravy.. Since I was using the loaf for samwiches, it didn’t cross my mind..
Don’t worry while forming the loaf, in its raw state its very soft and loose feeling.. I was worried I’d have mushloaf.. But as you can see in the picture, it cooks up pretty as a meatloaf can be..lol
