Mashed Potatoe Pie

This comes out light and fluffy and delicious.

4-6 servings

1 1/3 cup instant mashed potatoes

1/4 cup half n half

1 1/3 cup water

2 tbsp of butter or substitute

1/4 cup panko crumbs

1 tsp thyme

1 tsp garlic powder

1/4 cup grated or finely shredded extra sharp cheddar cheese.

In a med pot bring water to a boil, turn off heat, add butter and half n half.

Add potatoes and spices and stir.

Spread mixture in a 9in pie pan, season and sprinkle panko on the potatoes. Cover tightly with foil. Place in a preheated oven at 350 for 10 mins. Remove foil and evenly sprinkle cheese on top. Β Place uncovered pie back in the oven for about 5 mins. until golden brown. Watch carefully so the cheese doesn’t burn.

    1. Then next time I make mock mashed potatoes, I’ll post it.. Even a steak n potatoes truck driver couldn’t tell they weren’t potatoes.. I had tried a few cauliflower mock mashed potatoes recipes but they each had either texture or taste problems.. One was both problems.. But I discovered 3 secret ingredients by trial n error that solved both problems.. When I post it, if you enjoy mashed potatoes, I hope you’ll try my own mock mashed potatoes 😊
