This comes out light and fluffy and delicious.
1 1/3 cup instant mashed potatoes
1/4 cup half n half
1 1/3 cup water
2 tbsp of butter or substitute
1/4 cup panko crumbs
1 tsp thyme
1 tsp garlic powder
1/4 cup grated or finely shredded extra sharp cheddar cheese.
In a med pot bring water to a boil, turn off heat, add butter and half n half.
Add potatoes and spices and stir.
Spread mixture in a 9in pie pan, season and sprinkle panko on the potatoes. Cover tightly with foil. Place in a preheated oven at 350 for 10 mins. Remove foil and evenly sprinkle cheese on top. Place uncovered pie back in the oven for about 5 mins. until golden brown. Watch carefully so the cheese doesn’t burn.
