Panko Crusted Cheddar Chops

These thick cut boneless pork chops are juicy and delicious ! I had them with mashed potato pie. But it was my big meal of the day. Lol.

Serves 2

2 thick cut boneless pork chops

1/4 cup panko crumbs

EVOO enough to coat the pork chops

1tsp thyme

1tsp garlic powder

1tsp powdered ginger

1/4 cup finely shredded cheddar cheese

Preheat oven to 350

In a bowl or on a plate combine seasonings and panko. Add the cheese and gently incorporate it through with your fingers.

Coat the pork chops with EVOO and press each side into the mixture, coat the chops completely.

Place pork chops on a rack or expanded metal sheet and put in the oven above a drip pan. You won’t have much dripping down, the juices stay in the chops. If you put the chops on a solid tray then the bottom will be soggy and not browned.

Bake for 40 minutes or until done. A meat thermometer should read 160f.

These chops have a wonderful slight lemony tang. I’m guessing it has to do with the sharp cheddar. The crust is crispy and moist, and flavorful, the pork is juicy, tender and the crust enhances the pork flavor.

A really nice meal can be made in under an hr with these.

*update.. I just noticed a slight pink hue on the white plate and meat. Sigh.. The meat is white and fully cooked, I just have to remember to NOT wear a red top when taking pics. 😂 The top picture I just added to show they are done, I didn’t choose the picture because the flash went off and I didn’t like the angle..

    1. Definitely, I do that everytime Publix has a BoGo on pork loin roasts. One as a whole roast and the other cut into 1″-2″ chops, depending if I plan to make this dish (1″) or stuffed pork chops (2″).

    And this is my fav pork chop recipe.. As with any recipe you try here, please let me know how you’d rate it and/or improve on it.. We all have different tastes, so a low rating is just an honest opinion 👍
    And a new twist on a recipe turns it into a new recipe !
