Sounds like a song but eats like a dream.. Cold and rainy outside, tired on the inside.. But, I wanted a cozy warm meal and didn’t want to work for it..
Metaphorically, I had my cake and ate it too.. 😉
5 chicken thighs (breasts would work too)
1 15oz can of lightly candied yams
1 15 oz can of sliced pears.
1/2 cup dry oatmeal
A good shake each of cinnamon and ginger.
A light shake of ground thyme.
Preheat oven to 450°f
Arrange meat in pan, trifolded
Cook for 15 mins..
Take out pan and put on a trivet.. there will be lots of juices yum yum.
Turn down heat to 350°
Open the yams, drop them and the juice on the chicken..
Take 1 tbsp butter, break it up and drop inbetween the yams and chicken.. I promise, that tiny bit is perfect.
Open the pears, plop them and juice in too..
Shake on the cinnamon and ginger and thyme..
Sprinkle the oatmeal evenly on top and then take a spoon and spoon the juices in the pan over the oatmeal.. Covering up the spot you dunked thru last..
And then very lightly drizzle with honey..
Pop back in the oven and and set the timer for 30 mins.. Always check for doneness..
I had no idea what I’d pull back out of the oven but WOW, it was everything I hoped it would be.. I was just hoping it was edible for such a lack of effort..
I literally plopped the ingredients in and finished with a little TLC with the spices and oatmeal..
Sweet but not too sweet.. I love chicken n dumplings, they have always been my winter comfort food.. This doesn’t taste anything like them and I can’t explain why, but this is down to earth cozy and yummy, a comfort food different than but as good as, chicken n dumplings.. And doesn’t take any work to do really.. I hope you try it. But if you try with chicken breasts I think 1/4 cup of fat free low sodium broth may be in order.. thighs don’t require anything.. I just put em in the pan, baked and then added the rest and finished cooking…
This does bubble while cooking.. A tray underneath is a good idea..
As you can see, I got a little lazy spooning juice on the oatmeal but the toasted bits of oatmeal were good too.. And in that empty spot in the foreground was a thigh.. I was really hungry and ate before taking a picture..
