Crab Cakes Nirvana Royale
(makes 4 crab cakes)
–For When I can’t get to Ike’s Famous Crab Cakes on the boardwalk in Ocean City, NJ
1 pound lump crabmeat
8 saltine crackers, finely crushed
1 tablespoon coarse mustard (like Maille)
1 tablespoon mayonnaise
1-2 tablespoon butter (for pan sautéing)
For sandwich you’ll need:
2 kaiser rolls
Rooster Sauce (or your fave hot sauce)
Cook Your Crab Cakes:
Combine all crab cake ingredients in a bowl except butter and gently toss just until evenly combined. Form into 4 patties. Heat a skillet on medium heat and add butter. Brown until lightly golden brown (about 3-4 minutes on each side). Dust with salt and pepper, to taste.
For Each Sandwich:
Place 2 of your finished crab cakes on a kaiser roll topped with coleslaw, hot sauce, shredded lettuce and a thickish slice of a juicy, fresh tomato.
