A Holland Hoagie

-Here’s a great tasting, fairly healthy sandwich to take on the road with you.  I made this for my husband on those days his job would take him far from any restaurants.  It is, also, a great picnic item with a bottle of dry red wine or cut into thick slices as an appetizer.

DIRECTIONS:

Splay open a good Italian torpedo hoagie roll (like Amoroso) and lightly toast. Immediately spread insides with your favorite pesto (Buitoni makes a decent one).  Now add a layer each of sliced Campari tomatoes, jarred roasted red peppers and fresh mozzarella. Drizzle with balsamic glaze. Wrap sandwich tight with parchment paper and refrigerate for at least one hour for flavors to meld.   Best devoured at room temperature

  1. That sounds really healthy.. no salamis, ham, chicken or turkey..

    I’ve had some versions of veggie subs I like.. This one sounds better than those..

    Considering who was happy to take them for lunch, gives me hope I won’t miss the meat either.. 👍
