Banana Split Bread



2/3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

2 eggs

1/2 cup oil

3 bananas, very ripe, mashed**

2 tablespoons sour cream

1 teaspoon vanilla extract

1 small jar of Smucker’s
Wet Walnut ice cream topping

1 small jar Maraschino Cherries (stemless),
drained and halved

1/2 cup Semi-sweet chocolate mini morsels
Set oven to 350 degrees F. Grease your loaf pan and dust with flour. Line the bottom of a large loaf pan with parchment paper.
Sift together the flour, baking soda, and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, sour cream, and vanilla. Fold in dry ingredients, nuts, cherries and chocolate chips just until evenly incorporated. Pour into the loaf pan and bake for about 45 minutes to 1 hour, until loaf top is lightly browned and top feels firm when lightly pressed.

**this is a great cooking hack when you can’t find any over ripe bananas: Bake your unripe & unpeeled bananas in 350F oven for 5-7 minutes, skins will be blackened and the banana flesh will be soft and super sweet; just perfect for banana bread.)

    1. Smucker’s is a company known for jelly, jam as well as ice cream toppings. Wet Walnuts or Wet Nuts are a delicious ice cream sundae topping of walnuts in thick syrup.

      1. Just substitute a big handful of toasted regular walnuts or plain black walnuts. On an ice cream sundae it would matter but won’t matter much in this recipe.
