Stracciatella Soup

-Italian Spinach Soup

1 quart chicken broth

1 large bunch or pkg. fresh spinach, torn into pieces

1/2 box Ditalini pasta, cooked to al dente
Salt, to taste
Lots of coarse black pepper

Heat broth just to boiling, turn heat to low, add spinach and pasta. Continue to cook just until spinach is tender (around 5 minutes). Add salt and pepper, to taste. Serve up in bowls with a warmed, crusty Italian bread or even saltines crackers are good with this super easy soup.
