Shark Bites

-a tempura appetizer with three dipping sauces for about 20 pieces of shark steak trimmings; if you’re lucky enough, like me, to have a friend that just caught a Mako shark OR cut a shark steak(s) into bite-size pieces.

Tempura batter….always a good choice for seafood!

Ingredients:

1/2 cup AP flour

1/2 cup rice flour

1 tablespoon cornstarch

1 1/2 cups of seltzer water

Directions
Combine all ingredients. Dip shark bites in batter.  Fry 3-4 shark bites in hot peanut oil for 3-5 minutes. Drain.  Salt, to taste

Dipping Sauces:

Spicy Cocktail Sauce
(Heinz chili sauce or ketchup and a lot of hot horseradish, or to taste)
And/Or
Japanese Dipping Sauce
Chili sesame oil and soy sauce and Mirin, to taste for a little sweetness.
And/Or
Hot Mustard Sauce
3 Tbsp. Coleman’s dried mustard
mixed with 3 Tbsp. cold water (you can also sweeten up mustard sauce with an equal amount of bottled duck sauce)
