-The recipes from The Vegetarian Epicure by Anna Thomas will delight even the carnivore in you.  This 1972 cookbook from the queen of vegetarian cooking should be in every kitchen.  There is a revised edition she published a few years ago with a healthier version of some of her classics as well as some new recipes but, unless everyone at your table is a hardcore vegetarian stick with this cookbook’s sumptuous recipes.

There are two absolute must try recipes in this cookbook.  So good, you will make them over and over again….

Simply named, “BAKED MACARONI AND CHEESE”, this Roman-style dish is far from simple fare, it is a standout star made with Bechamel sauce, Fontina and Parmesan cheeses.

AND

“STUFFED BAKED EGGPLANT”

Soooo much better than even my other eggplant favorite, Eggplant Parmesan.  This dish of scooped out eggplant, diced up with red bell peppers, tomatoes, onion, garlic and spices sauteed in olive oil and put back in its eggplant shell and then topped with the most delicious ground walnut, wheat germ and parmesan “crust” is to die for!

My mouth is watering just remembering how good these recipes taste!
