Simply named, “BAKED MACARONI AND CHEESE”, this Roman-style dish is far from simple fare, it is a standout star made with Bechamel sauce, Fontina and Parmesan cheeses.
“STUFFED BAKED EGGPLANT”
Soooo much better than even my other eggplant favorite, Eggplant Parmesan. This dish of scooped out eggplant, diced up with red bell peppers, tomatoes, onion, garlic and spices sauteed in olive oil and put back in its eggplant shell and then topped with the most delicious ground walnut, wheat germ and parmesan “crust” is to die for!
My mouth is watering just remembering how good these recipes taste!
