Cold German Potato Salad


-5 lbs. Golden Yukon Potatoes baked (or microwaved) in their skins, then after cool enough to handle, cut into bite-sized chunks. Salt and set aside.
-1 lb. Bacon, cooked crisp in a pan, pour drippings in a large bowl. Coarsely crumble bacon and set aside…okay, go ahead take a slice for yourself first:)
-1 Bunch celery hearts, diced
-1 Vidalia/Sweet Onion, finely minced or onion powder, to taste
-1/2 cup Vinegar
-1/2 cup White sugar
-1 cup of Mayonnaise (or Miracle Whip, if you prefer, Pan:)
-Sea Salt and lots of Coarse Black Pepper, to taste


In same bowl you poured the bacon drippings add the vinegar, sugar and onion. Whisk until sugar is dissolved.
Add the mayonnaise,and bacon, blend well. Add salt and pepper, starting with a teaspoon of salt and tablespoon of pepper, taste, adjust, if necessary, to suit your tastebuds. Gently fold in the baked, cut up potatoes until evenly coated.
Cover bowl with plastic wrap and chill for at least two hours, folding one more time, after an hour so salad evenly chills.

  1. This is a family original. I watched my mother-in-law make it when we were first married because it was so good. Nana made the best soups and salads!


    1. You are the third person to mention that I should think about publishing..
      The suggestion alone is a treasure to me.. I guess if the blog went viral, I’d probably do it.. I have my readers that I adore here but don’t feel my collection garners much of a market in the literary world.. But a free publish thru Kindle is worth looking into.. I’ve never used it so it will be some research I have to do first.. Any suggestions you have are eagerly welcomed ! 😊

      1. This one is my sister’s recipe and I truly think she should make a collection of the original ones she’s created over the years and publish it..
        I don’t think this ones an original but she has plenty..

        And yes, sis I’ll use Miracle Whip in this one 😁
