Dad’s Taco Salad with Baked Tortilla Bowl

Our Dad is certainly is no slack in the kitchen either.  He created this recipe when trying to cut back on fried foods way before it was general knowledge just how bad Taco Bell’s fried taco salad bowl was for us.   Added plus, it’s delicious as well as healthy!

Ingredients:

“Azteca” brand flour tortillas

Ground Beef

Tomatoes

Onions

Mild taco sauce

Chunky salsa

Iceberg lettuce

Sour cream

Mexican or shredded Jack cheese

*Re-fried beans (if wanted)

Tabasco green pepper sauce

Meat Mixture:

Cook hamburger and small diced onions.  When almost done add taco sauce.  Salt and pepper to season. Keep warm.

Preheat oven to 350F degrees.

Remove as many tortillas as needed and re-seal package.  Lightly moisten tortilla and prick with fork on a flat surface.  Center tortilla on tortilla bowl form (if you don’t have a form you could use a small, deep bowl). Repeat with remaining tortillas.  Place on center rack of preheated  350F oven until tortillas are lightly browned and crisp.  Check closely as all ovens perform differently.  Remove tortillas from the form(s) and place on serving dish.  Put about 1/4 cup of the meat mixture in the bottom of the tortilla and add shredded lettuce followed by, in order, small diced tomatoes, small diced onions, some shredded cheese and a dollop of sour cream.  Serve with Tabasco.

*If using re-fried beans, add heated beans before the meat mixture.

    1. Its funny how we easily took it for granted until we realized our normal was other people’s break from meal monotony..

      We are very fortunate to have had our parents flair with food 😊

      And only spending an average amount on that food.. Creativity and knowledge made all the difference.. With a few flops we laughed about.. Some laughing later than others 😂

  1. I’d like to add that if you’re using metal forms that are NOT non stick then very lightly coat the form with an oil spray or quick swipe with an oil dampened papertowel..

    I’d recommend my sis’s alternative to metal forms.. A oven safe bowl would be so easy.. The only advantage to a form is you can duplicate the shape of a traditional taco salad bowl..

    In case of any misunderstanding, the form/bowl is placed upside down with the tortilla moulded to the outside surfaces..

    This is great dining in, healthier, tastier and way cheaper than the fast food or even nice restaurant offerings.. And YOU control the portion and ingredients 👍

    Its also tiny kitchen approved 😊

      1. Yes, we had completely different diets than our friends had.. No Monday spaghetti nights or Friday fish, like most people in our area, they seemed to have set dinner menus for weeknights..
        We mostly never knew what was for dinner until one of us set the table 😄
