4-6 fresh ripe black mission figs
1 roll of creamy goat cheese, (like Chevre)
1 cup balsamic vinegar
1 tsp honey
2 tsp brown sugar
Fresh loaf of Ciabatta or crusty artisan bread, sliced 1/2″ thick
1 small bag of shelled pistachios, roasted and coarsely chopped
Preheat oven to 425F degrees. Place whole figs on a cookie sheet with the slices of Ciabatta bread that have been brushed with olive oil on both sides. Bake in oven until bread slices have crisp edges but, still a little soft in the center.
Remove stems and slice the figs into four slabs.
Combine balsamic vinegar, honey, and brown sugar in a small sauce pot. Bring to a boil and reduce until thick enough to coat a spoon well.
Slather cooled toasts with some goat cheese. Then place fig slab on top of cheese. Sprinkle with chopped pistachios and finish off with the balsamic glaze.
