Fig, Goat Cheese and Pistachio Toasts

-Just for us pistachio lovers❣

4-6 fresh ripe black mission figs
1 roll of creamy goat cheese, (like Chevre)
1 cup balsamic vinegar
1 tsp honey
2 tsp brown sugar
Fresh loaf of Ciabatta or crusty artisan bread, sliced 1/2″ thick
Olive oil
1 small bag of shelled pistachios, roasted and coarsely chopped

Preheat oven to 425F degrees. Place whole figs on a cookie sheet with the slices of Ciabatta bread that have been brushed with olive oil on both sides. Bake in oven until bread slices have crisp edges but, still a little soft in the center.

Remove stems and slice the figs into four slabs.

Combine balsamic vinegar, honey, and brown sugar in a small sauce pot. Bring to a boil and reduce until thick enough to coat a spoon well.

Slather cooled toasts with some goat cheese. Then place fig slab on top of cheese. Sprinkle with chopped pistachios and finish off with the balsamic glaze.

  1. Mmmmmmm – three of the great loves of my life in one tart – as you know I adore pistachios, but I am also smitten with figs and a shameless goat-cheese hussy so you have fired a winner with this one and I will be a-making it myself very soon 🙂

  2. I hope that goat cheese tastes good to me.. Because I love all the rest of the ingredients.. And bet it would make a great appetizer to serve..

But just in case, I’m going to ask..
Can cream cheese be subbed for the goat cheese if I don’t like it ?
