Canola oil, for sautéing chops
4-6 center cut pork loin chops
About a cup of flour mixed with 1 tsp. onion salt, or to taste & enough coarse ground pepper so that you can clearly see the black specks
Thoroughly dredge chops on all sides in the seasoned flour and set aside on a rack.
Drizzle some oil in a frying pan (that has a lid) and heat pan on medium high.
When oil is hot, add chops and brown on all sides. Next, add enough water to almost cover chops in pan. When water starts to boil, cover and turn heat to low and simmer for about one hour. (Don’t be tempted to lift the pan lid while simmering unless it looks like added water is needed, this is the step that makes an awesome pork gravy).
Smothered pork chops are done when pork chops are fork tender and its gravy is the proper consistency.
Served with some homemade mashed potatoes, applesauce and your favorite green vegetable, this is about as “comfort food” as it gets.
