Grilled Jamaican Jerk Chicken with Honey Mango Salsa

Ingredients for Chicken:

-4-6 Chicken Leg Quarters
-1 jar Grace Jamaican Jerk rub
(or your favorite jerk rub)

Directions:
Entirely cover leg quarters with a thin coating of jerk rub. Refrigerate for at least one-two hours. Meanwhile, make the mango salsa.

Ingredients for mango salsa:

-3 Ripe mangos; peeled, pitted, medium diced
-1 red bell pepper; medium diced
-1/2 Vidalia onion, minced (If you desire a stronger onion flavor, replace Vidalia with 1/2 of a Bermuda onion.)
-1 TBSP fresh cilantro; finely chopped
-1 jalapeño peppers, seeded and minced
-3 Tablespoons lime juice
Drizzle honey (or agave syrup), to taste
-Sea salt and coarse black pepper, to taste

Directions:
Combine the mangos, red bell pepper, onions, cilantro, and jalapeño peppers in a bowl. Add the lime juice and toss until evenly blended. Season to taste with honey, salt and pepper.
Needs to refrigerate for at least an hour for flavors to meld.

Plate grilled leg quarter with some mango salsa and white or yellow rice.

  1. My husband is actually cooking this tonight on the grill as I type but, it’s so hot & humid tonight I’m wimping out on the mango salsa and just having Vigo yellow rice and mixed veggies in the microwave.
