Lemon Freeze

-I used to make this especially for our Mom; it was one of her favorites from my limited recipe repertoire in my teenage years:) It is a quick, easy, refreshing, lemony sweet summertime dessert.

*Bottom Layer:
1/2 cup Kellogg’s cornflakes, crushed
1/4 butter, melted
2 TBSP granulated sugar

Mix together and press into the bottom of a metal ice cube tray, place in freezer. (okay, this is very mid-last century so you probably don’t have one of those metal ice cube trays with the removable ice cube separator, so double everything in this recipe and put it all in a metal 8″ square cake pan:)

*Next Layer:
one 15 oz. can of sweetened condensed milk
1/3 cup Lemon Juice
2 pasteurized eggs, separated
(egg whites beaten until
foamy)
3 TBSP granulated white sugar

Mix all these ingredients together until well blended. Remove tray/pan from freezer and pour lemon layer onto corn flake layer and return to freezer.
When totally frozen, cut into generous squares and serve immediately.

As yummy as ice cream on a hot day!

*Remember, if using an 8″ square pan double all amounts!

  1. I happened across the recipe for Lemon Freeze going through my “family favorites”. Don’t know why we ever stopped making it….it’s like eating a frozen version of another favorite, Lemon Bars…but sooo much easier to make.
