Paula’s Hawaiian Chicken

It doesn’t get much more simple than this!


2 cups ketchup
1 cup honey
5 lb. cut up whole chicken
1 fresh pineapple, peeled, cored
and cut into slices
(or 1 can of pineapple slices)

Day Before Serving:
Mix ketchup and honey together in a glass marinating dish. Place cleaned chicken in marinade. Add pineapple (& my P.S. note, if using).
Let marinate overnight in the refrigerator.

Next Day, Cooking Instructions:
Preheat oven to 350F degrees.
Place chicken and pineapples in baking dish. Pour marinade over chicken. Bake for one and a half hours. Serve over short grain or “Sticky” rice.

P.S. I like to add 2 green peppers, cut into big chunks and 1 small bottle of drained, stemless maraschino cherries to Paula’s original dish. Tastes great and makes for a pretty presentation. Either way, YUM
