Grandmom’s Cream de Menthe Squares

One Step Cake Layer:

1 cup granulated sugar
4 eggs, beaten
1 cup AP flour
1/2 tsp salt
1/2 cup butter (1 stick)
16 oz. chocolate syrup (like Hershey’s or U-bet)
1 tsp vanilla extract

Blend the above cake ingredients together and pour batter into a greased and floured 8″ square cake pan. Bake in a preheated 350F degree oven for 30 minutes. Allow to cool in pan.

Mint Layer:

2 cups confectioner’s sugar
5 TBSP green Creme de Menthe

Whisk together mint layer ingredients until smooth and well blended. Spread over completely cooled cake.

Chocolate Icing Layer:

12 oz. bag chocolate chips
12 TBSP butter

Melt chocolate icing ingredients together and carefully pour and smooth over mint layer.

Cut into squares after chocolate layer cools completely.
