-2 pounds Red Snapper fillets
-1 TBSP butter
-2 TBSP orange juice
-2 tsp orange zest
-1 tsp salt
-pinch of nutmeg
-1/4 tsp cracked or coarse ground black pepper
Place fillets in a single layer in a lightly-oiled baking dish.
Combine remaining ingredients; pour over fish.
Bake in a preheated 350 degrees F oven for 20-25 minutes or until fish flakes easily with a fork.
