–I have a lovely, albeit somewhat foggy, memory of my mother creating this very special sandwich for me one day before I started primary school. None of my neighborhood friends were around and my mother was very busy with some thing or another and couldn’t stop and play but, she did take time out to make us a special picnic lunch.
What I do remember is being outside on a beautiful sunny day with my little china tea set all arranged just so, teapot filled with sweet iced tea, eating this incredible sandwich
…and I was happy❣
Here is the sandwich as close as I can remember…
2 slices soft white bread
(like Wonder Bread)
1 TBSP Miracle Whip
2 oz imported ham, thinly sliced
2 Heinz baby gherkin pickles,
1 large soft baked chocolate
1/2 banana, sliced in half,
lengthwise (making two half
slices of bananas)
1 TBSP creamy peanut butter
Smear Miracle Whip on one side of one slice of white bread.
Using this as your sandwich base, start to build the sandwich. On top of the Miracle Whip side of bread, place the ham, next place gherkin pickle slices, next center the cookie (which should be almost as large as the bread) over the ham, place the banana slices on top of the cookie. Finally, smear the peanut butter on one side of the second slice of bread and place on top of banana layer, peanut butter side down. Cut into four triangles and serve.
