Getting Grilled

Summer is grilling season, and dry seasonings and rubs make grilled meats sing with flavor. But, while convenient, sometimes you just can’t find your favorite brand name seasoning blends for the grill.  So here is a few recipes for my favorite seasoning blends for the grill…

Montreal Seasoning Blend
(Good on just about everything!)


4 TBSP sea salt
1 TBSP coarse ground black pepper
1 TBSP dehydrated onion
1/2 TBSP dehydrated garlic
1⁄2 TBSP crushed red pepper
1⁄2 TBSP dried thyme
1⁄2 TBSP dried rosemary
1⁄2 TBSP dried coriander

Blend together in an airtight jar. Sprinkle liberally on meats and poultry. Especially good on steaks and burgers.
Burka Steak Seasoning

1/4 cup kosher salt
1 cup brown sugar
1/4 cup coarsely ground black pepper
1 clove garlic, minced

Mix ingredients together and rub on steaks before grilling.

Potlatch Seasoning for Fish:

2 TBSP kosher salt
4 tsp paprika
1 tsp crushed red pepper
1 tsp chili powder
1 tsp oregano
1 tsp basil
½ tsp coriander

Combine all seasoning ingredients in a jar, tighten lid, and shake to combine.
Pork Rib & Roast Seasoning

1/4 cup Paprika
1/8 cup Fresh Ground Black Pepper
1-2 tablespoons Garlic Powder
1-2 tablespoons Onion Powder
1 tablespoon or more Cayenne Pepper
1/4 cup Coarse Salt
1/4 cup Brown Sugar

This will coat up to 6 lbs. Pork Ribs and 10 lbs. Pork Shoulder or Pork Roast.
Jamaican-style Jerk Rub
(especially delicious on chicken)


2 TBSP dehydrated minced onion

2 1/2 tsp dried thyme

2 tsp ground allspice

2 tsp coarse ground black pepper

1/2 teaspoon ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp ground habanero hot pepper
(or cayenne pepper, for slightly
less heat)

1/2 tsp sea salt

2 tablespoons Canola oil


In a small bowl, stir together the dried onion, thyme, allspice, ground black pepper, cinnamon, nutmeg, hot pepper, and salt. Coat meat lightly with oil, then rub seasoning onto meat.
