-quick and easy version!
1 lb ground chuck
1 finely diced jalapeño
1⁄2 cup chopped onion
2 cups shredded cheese
Monterey Jack or Mexican Blend
1 (20 ounce) can enchilada sauce
eight 8″ flour tortillas
Sour Cream/ Salsa Optional
Cook onions just until they soften, then add ground chuck and jalapeño. Continue to cook until ground chuck is browned and chopped up to an even texture.
Add 1 cup enchilada sauce and 1 cup cheese.
Put filling along center of each tortilla.
Roll up and place seam side down in a 9×13 pan.
Pour remaining sauce over.
Sprinkle remaining cheese over.
Bake at 350F degrees for about 30 minutes until cheese is bubbly.
Top with salsa and sour cream.
