Italiensk Minestrone Suppe

Let’s cook a big pot minestrone soup:

(12 servings)

3 tbsp olive oil for frying
1 leek into rings
1 onion, diced
2 boat garlic, minced
5 potato, diced
5 carrots, sliced
2 green squash in half slices
1 chili – without seeds, finely chopped
2 l broth or bouillon
2 cans chopped canned tomatoes
250g pasta – cooked as directed on the pack (omitted or replaced in gluten-free pasta if you have celiac disease)
2 cans white beans – rinsed in cold water (or bean mix if you prefer)
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh parsley
season with salt, pepper and sugar
5 tablespoons grated Parmesan
Approach:

Put olive oil in a large wide saucepan, saute onion and garlic a few minutes. Ha potatoes and vegetables and fry for 4-5 minutes. Hell on power and tomatoes and let everything simmer until vegetables are tender, about 10 minutes.

Add the pre-cooked pasta, beans that are rinsed in cold water and chopped fresh rosemary. Boil. Season with salt, pepper and a little sugar.

Serve the soup with parsley and parmesan sprinkle the good bread (or focaccia). Some crispy bacon bits on top is also good. Possible sausage pieces or meat if you want more protein in the soup.

The soup can be frozen, but often without the pasta. And there is certainly nothing in the way of serving pasta beside.
