-a very old recipe with an airy, crisp coconut cookie texture that comes from using bakers’ ammonia (NOT to be confused with household ammonia!). You can purchase bakers’ ammonia online from KAF (King Arthur Flour) as well as other baking sites.
1 cup butter
1 cup Crisco shortening
2 cups granulated white sugar
1 tsp pure vanilla extract
4 cups AP flour
2 tsp bakers’ ammonia
pinch of salt
2 cups flaked coconut
Preheat oven to 325F degrees.
Cream butter, shortening, sugar and vanilla.
Sift flour with the bakers’ ammonia and the salt.
Stir the flour mixture into the butter mixture until well blended.
Shape dough into balls about the size of a walnut.
Place about 2 1/2 inches apart on an ungreased cookie sheet.
Bake for 15 minutes. DO NOT OPEN OVEN DOOR while cookies are baking.
Remove cookies to cool on a wire rack.
Makes approx. 8 dozen cookies.
