-a raisin lovers dream cookie whose aroma always takes me back to my childhood.
Ingredients are as follows:
1/2 C shortening
1/2 C margarine
2 C brown sugar
3 3/4 C flour
1 tsp. baking soda
1 tsp. vanilla
1 large box (9 0z.) of raisins
1 Tbsp. cornstarch
3/4 C brown sugar
1/2 C water
Preheat oven to 350 degrees.
Place raisins, cornstarch, brown sugar and water into a small saucepan.
Simmer over medium heat until thickened. Turn off heat; allow to cool.
Cream shortening, margarine and brown sugar together.
Add eggs and mix until incorporated.
Add flour, baking soda and vanilla. Mix until completely combined.
Cover the bottom of a cookie sheet with saran wrap. Press half of the dough onto a jellyroll pan, covering it completely.
Using the saran wrap, remove dough, set aside and press the remaining dough onto the ungreased jelly roll pan.
Cover dough with raisins.
Flip first layer of dough on top of raisins; covering evenly.
Bake in preheated oven for 25-30 minutes or until golden brown.
After the pan has cooled thoroughly, cut into individual bars (or squares).
